Event Description

Joy and Victoria, blood cancer dietitians from the Mayo Clinic in Rochester, join the Adult AML Chapter! In this event they will teach us about some very important nutrition topics that will help support you throughout your treatment. Joy and Victoria will:

  • Describe what aspects of nutrition after an AML diagnosis can have the greatest impact on patient outcomes and positive preparation for stem cell transplant.
  • Review the roles of vitamins, minerals, and other supplementation during treatment for AML.
  • Identify evidence-based nutrition information resources to use and to share with your family and friends.

Katie joined the HealthTree Foundation as the Community Director for AML in 2021. She is a registered dietitian who previously worked at the VA hospital in Dallas, Texas where she coached veterans with blood cancer on how to use nutrition to improve their treatment outcomes and minimize cancer-related side effects. Katie is passionate about health education and patient empowerment. In her spare time, she loves to experiment with new recipes in the kitchen, spend time running outdoors, and travel to new places.

Joy Heimgartner, MS, RDN, CSO, LDN
Rochester, MN

Joy has been a clinical dietitian at Mayo Clinic in Rochester since 2008, where for the past eleven years she has been the primary dietitian for the hospital-based outpatient Blood & Marrow Transplant program. She is an Advanced Practice II dietitian and Assistant Professor of Nutrition in the Mayo Clinic College of Medicine & Science. Joy holds a master’s degree in clinical nutrition from Rutgers University and is a Board Certified Specialist in Oncology Nutrition. Joy teaches pre-transplant patient education classes and works closely with patients and their caregivers throughout their stem cell transplant recovery. Joy’s research work includes investigating the role of nutrition in patients with Multiple Myeloma, the role of magnesium in patients with blood cancers, and nutrition assessment in patients with Acute Myeloid Leukemia. Joy’s greatest professional satisfaction continues to come from helping her stem cell transplant patients and witnessing the incremental but astounding efforts they make despite the struggles they are going through.

Victoria Vasquez, RDN, LDN
Rochester, MN

Victoria has been a clinical dietitian at Mayo Clinic in Rochester for the past 1.5 years. She has worked inpatient for Hematology and Blood and Bone Marrow Transplant teams. Victoria graduated with her bachelor’s degree in nutrition and food science from Montclair State University and completed her clinical rotations at Mayo Clinic Rochester. Victoria works with patients newly diagnosed leukemia and lymphoma. She follows patients through induction chemotherapy and often sees them throughout their treatment course up through stem cell transplant. Victoria enjoys developing working relationships with her patients and seeing their victories, both large and small, as they progress through treatment.
