Recipes for MDS Patients: Balsamic Glazed Sweet Potato Fries
MDS patients can gain health benefits such as reduced inflammation, decreased fatigue, supported blood sugar control, lowered oxidative stress, supported heart health, and supported digestion by incorporating foods found in this recipe like sweet potatoes and balsamic vinegar into their meal plan. Balsamic Glazed Sweet Potato Fries
Ingredients
- 1 pound sweet potatoes
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup balsamic vinegar
Instructions
- Preheat oven to 425 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper
- Rinse the outsides of the sweet potatoes with water to remove any debris. Pat to dry (can leave the sweet potato skins on)
- Cut the sweet potatoes into ½-inch wide and 3-inch long sticks. Try to make them uniform so they cook evenly
- Mix the garlic powder, paprika, salt, and black pepper in a small bowl
- Place the potato sticks onto the baking sheet. Drizzle with olive oil. Toss to coat
- Sprinkle the spice mix over the sweet potatoes. Toss to coat
- Place the baking sheet on the top oven rack. Cook for 12 minutes, turn fries over with a spatula then cook another 12 minutes
- While the potatoes are cooking, pour the balsamic vinegar into a saucepan. Bring the vinegar to a boil over medium-high heat. Reduce heat to medium-low and simmer for 4-5 minutes stirring frequently till thickened. It should reduce to about ¼ cup. Keep warm till the fries are done cooking
- Once the fries are done cooking, remove from the oven and drizzle the balsamic glaze over the fries. Serve warm
